Oven-Poached Salmon Salad with Mustard Vinaigrette (ask me for the recipe). Second choice would be Rice Vermicelli Salad with Vietnamese Pork Chops (I can give you that recipe too).
A perfect day for me looks like:
A quiet morning with some journaling/reading/prayer, then a 15km hike with my hubby/family to a gorgeous mountain summit with 800 elevation gain where you can see forever, then a dip in a crystal clear lake, then a delicious meal on a patio overlooking said mountains with a cup of tea to finish.
Book(s) I would recommend:
Never Split the Difference by Chris Voth. Fascinating book on negotiating including in high risk situations.
